  • 1 cup sour cream
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup cheese, shredded
  • 10 corn tortillas
  • 1 cup green enchilada sauce
  • 1/2 cup bell pepper, diced
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, combine the shredded chicken, sour cream, cream of chicken soup, half of the cheese, bell pepper, and garlic powder.
  3. Spread a layer of enchilada sauce on the bottom of a baking dish.
  4. Layer 5 corn tortillas on top of the sauce, followed by half of the chicken mixture.
  5. Repeat the layers, ending with the remaining tortillas on top.
  6. Spread the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 25-30 minutes or until bubbly and golden.
  8. Let it cool for a few minutes before serving.
