Vegetarian Black Bean Enchiladas: 1 Flavorful Tex-Mex Favorite

A delicious and easy recipe for Vegetarian Black Bean Enchiladas that brings the authentic taste of Tex-Mex to your table.

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese
  • 2 cups enchilada sauce
  • 8 corn tortillas
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté the onion and garlic until soft.
  3. Add the black beans and corn, and cook for another 5 minutes.
  4. Spread some enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the bean mixture, roll them up, and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with cheese.
  7. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • These enchiladas can be made ahead of time and baked just before serving.
