Thai Style Coconut Curry Shrimp Noodle Bowls

  • 1 pound shrimp, peeled and deveined
  • 8 ounces rice noodles
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 2 cups spinach
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and sauté until translucent.
  3. Add garlic and ginger, stirring for about 1 minute until fragrant.
  4. Stir in coconut milk and red curry paste, mixing until combined.
  5. Add shrimp into the skillet and cook until they turn pink, about 3-4 minutes.
  6. Stir in lime juice, spinach, and cooked noodles until everything is well mixed.
  7. Serve hot, garnished with green onions and cilantro.

Notes

  • For extra spice, add sliced peppers or a drizzle of chili oil.
