- 8 corn tortillas
- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 cup shredded cheese
- 1 bell pepper, diced
- 4 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 cup chopped green onions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the turkey bacon until crispy, then remove and chop.
- Sauté the bell pepper until soft, then add the chicken ham and cooked bacon.
- In a bowl, whisk the eggs with salt, pepper, and paprika. Pour into the skillet and scramble until fully cooked.
