  • 8 corn tortillas
  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 cup shredded cheese
  • 1 bell pepper, diced
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the turkey bacon until crispy, then remove and chop.
  3. Sauté the bell pepper until soft, then add the chicken ham and cooked bacon.
  4. In a bowl, whisk the eggs with salt, pepper, and paprika. Pour into the skillet and scramble until fully cooked.
  5. Place the corn tortillas on a baking sheet and fill each with the egg mixture.
  6. Top with shredded cheese and green onions.
  7. Bake in the oven for 15-20 minutes until the cheese is melted.
  8. Serve warm.
