Street Corn Pasta Salad

  • 2 cups fresh corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package directions. Drain and let cool.
  2. In a large bowl, combine the corn, red bell pepper, avocado, red onion, and cilantro.
  3. Add the cooled pasta to the vegetable mixture.
