  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the cream cheese until smooth, then mix in the melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring gently until just combined. Fold in the chopped strawberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool for 5 minutes in the pan, then remove and cool completely on a wire rack.

Notes

  • For best flavor, use ripe strawberries.
  • You can substitute the cream cheese with Greek yogurt for a lighter version.
