- 1 pound sushi rice
- 2 cups water
- 1 pound salmon fillet
- 1/4 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 teaspoon soy sauce
- 1 avocado, sliced
- 1 green onion, chopped
- 1 tablespoon sesame seeds
- Preheat the oven to 350°F (175°C).
- Rinse the sushi rice under cold water until the water runs clear. Combine with water in a rice cooker and cook according to manufacturer’s instructions.
- While the rice is cooking, prepare the salmon. Bake the salmon in the oven for 15-20 minutes until fully cooked, then let it cool and flake it.
- In a bowl, mix flaked salmon with mayonnaise, sriracha sauce, and soy sauce.
- Once the rice is cooked, spread it in an even layer in a greased baking dish.
- Spread the salmon mixture evenly over the rice.
- Bake in the oven for 10-15 minutes, or until warm and slightly golden on top.
- Garnish with sliced avocado, chopped green onion, and sesame seeds before serving.
