Spicy Chickpea and Avocado Wrap

A delicious and nutritious wrap featuring spicy chickpeas and creamy avocado.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 avocado, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 whole grain wraps
  • 1 cup spinach leaves
  • 1/2 cup diced tomatoes

Instructions

  1. In a skillet over medium heat, add olive oil.
  2. Add chickpeas, cumin, paprika, cayenne, salt, and pepper. Cook until heated through.
  3. Lay the wraps on a flat surface.
  4. Spread avocado, spinach, and tomatoes on each wrap.
  5. Spoon the chickpea mixture evenly onto the wraps.
  6. Wrap tightly, slice in half, and serve.
