2 pounds chicken thighs
1 cup pineapple chunks
1/2 cup brown sugar
1/4 cup soy sauce
1 tablespoon minced garlic
1 tablespoon grated ginger
1/4 cup red bell pepper, chopped
1/4 cup green onions, sliced
1 teaspoon black pepper
Instructions
In a large crockpot, combine chicken thighs, pineapple chunks, brown sugar, soy sauce, minced garlic, grated ginger, red bell pepper, and black pepper.
Cover and cook on low for 6 to 8 hours or until chicken is tender and cooked through.
Once cooked, shred the chicken with two forks and stir to combine with the sauce.
Serve hot, garnished with green onions.
