  • 1 cup sushi rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 8 ounces fresh salmon
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 avocado, sliced
  • 2 tablespoons chopped green onions
  • 1 teaspoon sesame seeds

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water. Bring to a boil, then reduce to low, cover, and simmer for 20 minutes.
  3. Remove from heat and let it sit, covered, for another 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
  5. Spread the seasoned rice onto a baking sheet to cool.
  6. While the rice is cooling, slice the salmon into small cubes and marinate in soy sauce and sesame oil.
  7. Once the rice is cooled, shape it into small squares or rectangles.
  8. Top each rice piece with marinated salmon, avocado slices, and garnish with green onions and sesame seeds.
  9. Serve immediately and enjoy!

Notes

  • For extra flavor, sear the salmon lightly before placing it on the rice.
