- 2 cups potatoes, thinly sliced
- 1 cup carrots, thinly sliced
- 1 cup parsnips, thinly sliced
- 2 cups heavy cream
- 1 cup grated cheese, such as Gruyère
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced potatoes, carrots, and parsnips.
