Roasted Veggie Lentil Salad

A hearty and nutritious roasted veggie lentil salad that makes the perfect comfort food.

Ingredients

  • 1 cup green lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 cups fresh spinach
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
  3. Meanwhile, on a baking sheet, toss diced vegetables with olive oil, garlic, cumin, smoked paprika, salt, and pepper. Roast for 25-30 minutes.
  4. Once lentils and vegetables are cooked, combine them in a large bowl.
  5. Add fresh spinach and parsley to the bowl and mix well.
  6. Serve warm or chilled.

Notes

  • For added flavor, squeeze some lemon juice over the salad before serving.
  • This salad can be made ahead of time and tastes even better the next day.
