- 1 cup green lentils
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt to taste
- Black pepper to taste
- 2 cups fresh spinach
- 1/4 cup fresh parsley, chopped
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
- Meanwhile, on a baking sheet, toss diced vegetables with olive oil, garlic, cumin, smoked paprika, salt, and pepper. Roast for 25-30 minutes.
- Once lentils and vegetables are cooked, combine them in a large bowl.
- Add fresh spinach and parsley to the bowl and mix well.
- Serve warm or chilled.
Notes
- For added flavor, squeeze some lemon juice over the salad before serving.
- This salad can be made ahead of time and tastes even better the next day.
