Quick Southwest Chicken Salad

A refreshing and easy weeknight meal that’s full of flavor!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • salt to taste

Instructions

  1. In a large bowl, combine the cooked chicken, black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, and salt.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.

Notes

  • This salad can be served on its own or with tortilla chips.
  • Add cheese for extra flavor!
