  • 8 ounces rotini pasta
  • 2 cups corn, grilled
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup chicken ham, diced
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • 1/4 cup mayonnaise
  • 1/2 teaspoon cumin
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions, then drain and set aside to cool.
  2. In a large bowl, combine the grilled corn, turkey bacon, chicken ham, bell pepper, jalapeño, red onion, and cilantro.
  3. Add the cooled rotini pasta to the mixture and toss to combine.
  4. In a separate bowl, mix the lime juice, mayonnaise, cumin, salt, and black pepper to make the dressing.
