  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons red food coloring

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, vanilla extract, and peppermint extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the dough in half. Add red food coloring to one half and mix until the color is uniform.
  7. Roll out each portion of dough into a rectangle on a piece of wax paper.
  8. Stack the colored dough on top of the uncolored dough and roll into a log.
  9. Chill the dough in the refrigerator for an hour.
  10. Slice the log into cookies and place them on a baking sheet.
  11. Bake for 10-12 minutes until the edges are lightly golden.
  12. Let cool before serving.
