One Pot Creamy Carrot Lentil Soup

This One Pot Creamy Carrot Lentil Soup is not only easy to make but also nourishing and delicious.

Ingredients

  • 1 cup lentils
  • 2 cups carrots, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
  2. Add the chopped carrots and lentils to the pot.
  3. Pour in the vegetable broth and add cumin, salt, and black pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes or until lentils are tender.
  5. Stir in coconut milk and adjust seasoning as needed.
  6. Serve hot and enjoy!
