- 2 cups carrots, chopped
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup coconut milk
- In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until soft.
- Add the chopped carrots and lentils to the pot.
- Pour in the vegetable broth and add cumin, salt, and black pepper.
