  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 3 cloves minced garlic
  • 1 can (14.5-ounce) diced tomatoes
  • 1 can (15-ounce) kidney beans, drained and rinsed
  • 1 can (15-ounce) cannellini beans, drained and rinsed
  • 4 cups beef broth
  • 1 tablespoon Italian seasoning
  • 2 cups small pasta
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the ground beef and cook until browned.
  3. Add onion, carrots, celery, and garlic; sauté until softened.
  4. Stir in diced tomatoes, kidney beans, cannellini beans, and beef broth.
  5. Add Italian seasoning and bring to a boil.
  6. Reduce heat and simmer for 30 minutes.
  7. Add pasta and cook until al dente.
  8. Season with salt and pepper before serving.
