- 1 pound dried navy beans
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup turkey bacon, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon thyme
- 1 bay leaf
- Salt to taste
- Black pepper to taste
- Soak the beans overnight in water.
- In a large pot, cook turkey bacon over medium heat until crispy.
- Add onion, garlic, carrots, and celery; sauté until softened.
- Drain beans and add to the pot along with chicken broth, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Remove bay leaf and serve hot.
Notes
- For a thicker soup, mash some of the beans.
- Adjust seasoning as needed.
