Old-Fashioned Ham and Bean Soup

A hearty and comforting ham and bean soup that combines traditional flavors with a twist of turkey bacon.

Ingredients

  • 1 pound dried navy beans
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup turkey bacon, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Soak the beans overnight in water.
  2. In a large pot, cook turkey bacon over medium heat until crispy.
  3. Add onion, garlic, carrots, and celery; sauté until softened.
  4. Drain beans and add to the pot along with chicken broth, thyme, bay leaf, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
  6. Remove bay leaf and serve hot.

Notes

  • For a thicker soup, mash some of the beans.
  • Adjust seasoning as needed.
