  • 4 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups butternut squash, cubed
  • 2 cups kale, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced onion and minced garlic, sauté until soft.
  3. Add chicken broth, butternut squash, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes until squash is tender.
  5. Add kale and cook for an additional 5 minutes.
  6. Crumble the cooked turkey bacon and stir into the soup before serving.
