  • 4 roasted poblano peppers
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 cup turkey bacon, cooked and crumbled
  • salt to taste
  • black pepper to taste
  • 1 tablespoon lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roast the poblano peppers until the skin is charred, then place them in a bowl and cover to steam.
  3. After 10 minutes, peel off the skins, remove seeds, and chop the peppers.
  4. In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until softened.
  5. Add the chopped poblano peppers, vegetable broth, cumin, and smoked paprika. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  6. Blend the soup until smooth, then stir in the heavy cream and crumbled turkey bacon.
  7. Season with salt, black pepper, and lime juice before serving.
