  • 1/4 cup melted butter
  • 16 ounces cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced fresh peaches

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press mixture into the bottom of muffin tins.
  3. In a larger bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs, mixing until combined.
  4. Fold in the diced peaches.
  5. Pour the cheesecake mixture over the crusts in the muffin tins.
  6. Bake for 20-25 minutes or until set. Let cool and refrigerate before serving.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • You can use canned peaches if fresh ones are not available, just drain and chop them.
