Mini Mushroom and Gruyère Pot Pies with Thyme

  • 2 cups mushrooms, chopped
  • 1 cup Gruyère cheese, shredded
  • 1 tablespoon fresh thyme, chopped
  • 1/2 cup onion, finely chopped
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup vegetable broth
  • 1 package puff pastry
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, melt butter and sauté onions and mushrooms until softened.
  3. Stir in flour and cook for 1 minute.
  4. Add vegetable broth and thyme, cooking until thickened.
  5. Remove from heat, then mix in Gruyère cheese.
  6. Roll out puff pastry and cut into rounds.
  7. Fill mini pie dishes with the mixture and cover with pastry rounds.
  8. Brush with beaten egg and make slits for steam.
  9. Bake for 20-25 minutes, until golden brown.
