  • 9 sheets lasagna noodles
  • 2 tablespoons olive oil
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup sliced zucchini
  • 1 cup sliced mushrooms
  • 1 cup spinach
  • 15 ounces ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; set aside.
  3. In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  4. Add zucchini and mushrooms, cooking until tender, then stir in spinach until wilted.
  5. In a bowl, combine ricotta cheese, Italian seasoning, and season with salt and pepper.
  6. Spread a layer of marinara sauce on the bottom of a baking dish.
  7. Layer noodles, ricotta mixture, sautéed vegetables, and mozzarella cheese. Repeat layering until all ingredients are used.
  8. Top with remaining marinara sauce and sprinkle with Parmesan cheese.
  9. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden.
  10. Let cool for a few minutes before serving.
