- 9 sheets lasagna noodles
- 2 tablespoons olive oil
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 cup sliced zucchini
- 1 cup sliced mushrooms
- 1 cup spinach
- 15 ounces ricotta cheese
- 1 cup grated mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 teaspoon Italian seasoning
- salt to taste

- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; set aside.
- In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Add zucchini and mushrooms, cooking until tender, then stir in spinach until wilted.
- In a bowl, combine ricotta cheese, Italian seasoning, and season with salt and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer noodles, ricotta mixture, sautéed vegetables, and mozzarella cheese. Repeat layering until all ingredients are used.
- Top with remaining marinara sauce and sprinkle with Parmesan cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes until golden.
- Let cool for a few minutes before serving.
