- 12 ounces ziti pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 carrot, grated
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Preheat the oven to 375°F (190°C).
- Cook the ziti according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, and sauté until softened.
- Add bell pepper, zucchini, and carrot, cooking until the vegetables are tender.
