- 4 large russet potatoes
- 1 cup turkey bacon, diced
- 1/2 cup onion, chopped
- 4 cups chicken broth
- 2 cups milk
- 1/2 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, sliced
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onions and cook until translucent.
- Add diced potatoes, chicken broth, and bring to a boil. Cook until potatoes are tender.
- Stir in milk, sour cream, garlic powder, salt, and pepper. Simmer for 10 minutes.
- Use a potato masher to slightly mash potatoes for desired consistency.
