Loaded Baked Potato Soup

A creamy and hearty loaded baked potato soup enriched with crispy turkey bacon, perfect for a cozy dinner.

  • 4 large russet potatoes
  • 1 cup turkey bacon, diced
  • 1/2 cup onion, chopped
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, sliced

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and cook until translucent.
  3. Add diced potatoes, chicken broth, and bring to a boil. Cook until potatoes are tender.
  4. Stir in milk, sour cream, garlic powder, salt, and pepper. Simmer for 10 minutes.
  5. Use a potato masher to slightly mash potatoes for desired consistency.
  6. Garnish with cooked bacon, cheddar cheese, and green onions before serving.

Notes

  • For a vegetarian option, substitute bacon with mushrooms and vegetable broth.
  • Adjust thickness by adding more or less milk.
