Ingredients

  • 1/4 cup cold unsalted butter, cubed
  • 1/2 cup heavy cream
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 large egg

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. Stir in the cream, lemon juice, lemon zest, and egg until just combined.
  5. Turn the dough onto a floured surface and knead gently.
  6. Shape the dough into a circle about 1-inch thick and cut into wedges.
  7. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until lightly golden.
  8. Allow to cool slightly before serving.

Notes

  • For an extra lemony flavor, drizzle with lemon glaze after baking.
