  • 1 cup fresh raspberries
  • 1 tablespoon lemon zest
  • 1/2 cup heavy cream
  • 1 large egg

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Add the cubed butter and mix until it resembles coarse crumbs.
  4. Gently fold in raspberries and lemon zest.
  5. In another bowl, whisk together heavy cream and egg.
  6. Pour the wet ingredients into the dry mixture and stir until just combined.
  7. Turn the dough onto a floured surface and knead gently.
  8. Shape into a circle about 1 inch thick and cut into wedges.
  9. Place scones on the prepared baking sheet and bake for 15-20 minutes until golden brown.
