- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric powder
- 6 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup rice, uncooked
- 1 lemon, juiced
- 2 carrots, diced
- 1 celery stalk, diced
- 2 tablespoons fresh parsley, chopped
- In a large pot, heat the olive oil over medium heat.
- Add the onion, garlic, and ginger and sauté until fragrant.
- Stir in turmeric and cook for another minute.
- Add chicken broth, chicken, and rice; bring to a boil.
- Reduce heat and simmer until rice is fully cooked.
- Add the lemon juice, carrots, and celery.
- Cook for 5 more minutes and stir in parsley before serving.
