Lemon Ginger Turmeric Chicken and Rice Soup

A warm and comforting soup perfect for chilly evenings.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup rice, uncooked
  • 1 lemon, juiced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, and ginger and sauté until fragrant.
  3. Stir in turmeric and cook for another minute.
  4. Add chicken broth, chicken, and rice; bring to a boil.
  5. Reduce heat and simmer until rice is fully cooked.
  6. Add the lemon juice, carrots, and celery.
  7. Cook for 5 more minutes and stir in parsley before serving.

Notes

  • This soup can be made in advance and stored in the refrigerator.
  • Leftovers taste great the next day!
