  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup powdered sugar (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy.
  3. Sift together the flour, cornstarch, and salt; gradually blend into the creamed mixture.
  4. Mix in the vanilla extract, lemon zest, and lemon juice until combined.
  5. Shape the dough into 1-inch balls and place on ungreased baking sheets.
  6. Bake for 12-15 minutes or until set but not browned.
  7. Remove from the oven and let cool slightly before rolling in the remaining powdered sugar.
  8. Allow to cool completely on wire racks.

Notes

  • For a stronger lemon flavor, add more lemon zest.
  • These cookies can be stored in an airtight container for up to a week.
