Huli Huli Chicken

  • 4 pounds chicken thighs
  • 1 cup soy sauce
  • 1 cup pineapple juice
  • 1 cup brown sugar
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons sesame oil

Instructions

  1. Combine soy sauce, pineapple juice, brown sugar, ketchup, garlic, ginger, and sesame oil in a bowl to create the marinade.
  2. Add chicken thighs to the marinade, cover, and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from marinade and grill for about 6-7 minutes on each side, basting with reserved marinade.
  5. Cook until the internal temperature reaches 165°F (75°C).
  6. Remove from grill and let rest for a few minutes before serving.

Notes

  • For extra flavor, consider adding chili flakes to the marinade.
