Hearty Vegan Lentil Mushroom Stew

A warm and satisfying vegan stew that’s packed with protein-rich lentils and hearty mushrooms.

Ingredients

  • 1 cup green or brown lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 can (14 oz) diced tomatoes
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery; sauté until softened.
  3. Stir in the mushrooms, thyme, paprika, and bay leaf; cook for another few minutes.
  4. Add the lentils, broth, and tomatoes; bring to a boil.
  5. Reduce heat, cover, and simmer for about 30 minutes or until lentils are tender.
  6. Season with salt and pepper to taste, remove bay leaf, and serve warm.

Notes

  • This stew can be made a day ahead for better flavor development.
