Hearty Cheddar Garlic Herb Potato Soup Recipe

A delicious and creamy potato soup with the added zest of garlic, herbs, and turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in the diced potatoes and cook for a few minutes.
  3. Add the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
  4. Remove about half of the soup and blend until smooth, then return it to the pot.
  5. Stir in the heavy cream, shredded cheese, thyme, rosemary, and cooked turkey bacon.
  6. Season with salt and pepper, and serve warm.

Notes

  • This soup is great topped with additional cheese and bacon bits.
  • For a thicker consistency, blend more of the soup before adding cream and cheese.
