- 4 cups diced potatoes
- 1 cup shredded cheddar cheese
- 4 slices turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.
- Stir in the diced potatoes and cook for a few minutes.
- Add the chicken broth and bring to a boil. Reduce heat and let simmer until potatoes are tender.
- Remove about half of the soup and blend until smooth, then return it to the pot.
- Stir in the heavy cream, shredded cheese, thyme, rosemary, and cooked turkey bacon.
- Season with salt and pepper, and serve warm.
Notes
- This soup is great topped with additional cheese and bacon bits.
- For a thicker consistency, blend more of the soup before adding cream and cheese.
