Healthy Nut & Seed Energy Cookies

Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup mixed nuts (chopped)
  • 1/4 cup seeds (pumpkin or sunflower)
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the oats, almond butter, honey or maple syrup, and cinnamon.
  3. Add in the chopped nuts, seeds, dark chocolate chips, and salt, mixing until well combined.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes, or until golden brown.
  6. Let them cool before enjoying.
