  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the grated zucchini, honey/maple syrup, applesauce, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the whole wheat flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the dark chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool before serving.

Notes

  • For extra moisture, you can add an additional 1/4 cup of applesauce.
