Healthy Cucumber Pasta Salad

A light and refreshing cucumber pasta salad with turkey bacon, perfect for summer gatherings.

Ingredients

  • 8 ounces rotini pasta
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 4 strips turkey bacon, cooked and crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine diced cucumber, cherry tomatoes, turkey bacon, red onion, and feta cheese.
  3. Add the cooked pasta to the vegetable mixture.
  4. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For a vegetarian option, omit the turkey bacon and add more vegetables.
  • This salad can be made ahead of time and stored in the refrigerator.
