  • 1 pound shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, cooked
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine the shrimp with lime juice, garlic powder, cumin, salt, and pepper.
  3. Grill the shrimp for about 2-3 minutes on each side or until cooked through.
  4. In another bowl, mix diced avocado, corn, cherry tomatoes, red onion, and cilantro to make the salsa.
  5. For the creamy sauce, mix sour cream, mayonnaise, garlic powder, and a pinch of salt.
  6. Assemble the bowl by placing grilled shrimp on a bed of rice or greens, topping with corn salsa and drizzling creamy sauce over it.

Notes

  • Feel free to add more ingredients to the salsa like jalapeño or bell peppers for extra flavor.
  • This recipe can be made with grilled chicken instead of shrimp.
