  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup apple cider
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef and brown on all sides.
  2. Add the onion and garlic, sautéing until fragrant.
  3. Pour in the beef broth and apple cider, and bring to a boil.
  4. Add carrots, potatoes, thyme, salt, and pepper. Reduce heat, cover, and simmer for 2 hours.
  5. In a small bowl, mix cornstarch and water to create a slurry. Stir into the stew to thicken.
  6. Serve hot over mashed potatoes.
