A delicious twist on a classic pasta salad, combining flavors reminiscent of Mexican street corn with the savory touch of turkey bacon.

  • 1 cup corn kernels
  • 4 slices turkey bacon
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup diced avocado
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions; drain and cool.
  2. In a skillet, cook turkey bacon until crispy; chop into pieces.
