Easy Creamy Lasagna Soup – Cozy Fall Comfort in a Bowl

  • 4 ounces turkey bacon
  • 1 pound chicken ham
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 8 ounces lasagna noodles broken
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded
  • 1/2 cup parmesan cheese grated

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add the diced onion and garlic, sauté until softened.
  3. Add in the chicken ham and cook for a few minutes.
  4. Stir in the diced tomatoes, chicken broth, and Italian seasoning; bring to a boil.
  5. Add the broken lasagna noodles and simmer until cooked through.
  6. Stir in the ricotta cheese, then top with mozzarella and parmesan, letting them melt before serving.

Notes

  • Feel free to add vegetables like spinach or zucchini for extra nutrition.
  • Top with extra cheese before serving if desired.
