  • 2 tablespoons rice vinegar

  • 1 pound salmon fillet
  • 1 tablespoon olive oil
  • 2 teaspoons soy sauce
  • 1 avocado, sliced
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then combine with water in a saucepan and bring to a boil.
  3. Once boiling, reduce heat, cover, and simmer for 20 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt; heat until dissolved. Stir into the cooked rice and let cool.
  5. While the rice cools, season the salmon fillet with olive oil and soy sauce and bake for 15-20 minutes or until cooked through.
  6. Once the salmon is done, flake it with a fork.
  7. In muffin tins, press the cooled sushi rice to form cups.
  8. Fill each cup with flaked salmon, slices of avocado, and top with green onions and sesame seeds.
