Crockpot Vegetarian Tortilla Soup for Cozy Weeknight Comfort

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (28 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt to taste
  • 1 cup tortilla strips

Instructions

  1. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.
  2. Add bell pepper, carrots, and celery. Cook for 5 minutes.
  3. Transfer vegetables to the crockpot. Add black beans, corn, tomatoes, broth, cumin, chili powder, paprika, and salt.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Before serving, stir in tortilla strips.

  • This soup can be customized with your favorite vegetables.
  • Top with avocado, cilantro, or lime juice for extra flavor.
