  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained
  • 1 can (15 ounces) corn, drained
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup tortilla strips
  • 1 cup shredded cheese

Instructions

  1. In a large Crockpot, add olive oil, chopped onions, and minced garlic. Sauté until fragrant.
  2. Add chicken breasts, diced tomatoes, black beans, corn, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Once cooked, shred the chicken in the pot and stir everything together.
  5. Serve hot, garnished with tortilla strips and shredded cheese.
