Crock Pot Birria Tacos

  • 2 pounds beef chuck roast
  • 1 cup beef broth
  • 3 dried guajillo chiles
  • 2 dried pasilla chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 10 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Soak dried chiles in hot water for 15 minutes, then blend with garlic, onion, beef broth, and spices.
  2. Place the beef chuck in the Crock Pot and pour the blended sauce over it.
  3. Cover and cook on low for 8 hours or until the meat is tender.
  4. Shred the meat and serve in tortillas with cilantro and lime.
