Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side.
  2. Remove the chicken from the skillet and set aside.
  3. Add the onion and garlic to the skillet and sauté until softened, about 3 minutes.
  4. Stir in the rice, chicken broth, heavy cream, paprika, thyme, salt, and pepper.
  5. Return the chicken to the skillet, cover, and simmer for 20 minutes or until the rice is tender.
