  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 4 cups chicken broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add diced onion and cook until soft.
  2. Add minced garlic and cook for another minute.
  3. Add the chicken breasts and cook until browned on both sides.
  4. Pour in the enchilada sauce and chicken broth. Bring to a simmer.
  5. Stir in the black beans, corn, and cumin.
  6. Simmer for 15-20 minutes or until the chicken is cooked through.
  7. Remove chicken, shred it, and return it to the pot.
  8. Stir in the heavy cream and cheese until melted and combined.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh cilantro before serving.
