  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, diced
  • 1/2 cup creamy sauce (sour cream or a dressing of choice)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups cooked rice

Instructions

  1. Cook the chicken breast in a skillet over medium heat until fully cooked, seasoning with smoked paprika, cumin, salt, and pepper.
  2. Prepare the rice according to package instructions.
  3. In a bowl, combine black beans and corn.
