Chicken Normandy or French Apple Cider Chicken

  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon butter

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken thighs and brown on both sides.
  3. Remove chicken and set aside.
  4. Add onion and garlic to the pan, sauté until soft.
  5. Pour in apple cider and chicken broth, scrape the bottom of the pan.
  6. Return chicken to the pan, add thyme, salt, and pepper.
  7. Cover and simmer for 30 minutes.
  8. Stir in butter before serving.
