Chicken Enchiladas are a must-try for dinner!

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese
  • 8 flour tortillas
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté the onions until translucent.
  3. Mix the shredded chicken with half of the enchilada sauce and half of the cheese.
  4. Fill each tortilla with the chicken mixture and roll them up.
  5. Place the rolled tortillas in a baking dish and top with remaining enchilada sauce and cheese.
  6. Bake for 20 minutes or until the cheese is bubbly.

Notes

  • Feel free to add your favorite toppings like sour cream and avocado.
  • These enchiladas can be made ahead of time and stored in the fridge.
