- 2 cups butter beans
- 4 slices turkey bacon
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 carrot, diced
- 2 celery stalks, diced
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- In a pot, cook turkey bacon until crispy. Remove and crumble.
- Add onion, garlic, carrot, and celery to the pot and sauté until soft.
- Stir in butter beans, vegetable broth, and thyme. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add crumbled bacon back into the soup. Season with salt and pepper.
