Ingredients

  • 2 cups butter beans
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 carrot, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, cook turkey bacon until crispy. Remove and crumble.
  2. Add onion, garlic, carrot, and celery to the pot and sauté until soft.
  3. Stir in butter beans, vegetable broth, and thyme. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Add crumbled bacon back into the soup. Season with salt and pepper.
  6. Serve warm and enjoy!
