  • 1 cup coconut milk
  • 2 tablespoons lemon juice

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, mix the coconut milk, lemon juice, minced garlic, salt, and pepper.
  3. Place the cod fillets in a baking dish and pour the coconut lemon sauce over them.
  4. Bake for 15-20 minutes or until the cod flakes easily with a fork.
